If your talking about the desktop version, be sure you have the option 'I want to have fun' activated.
Just guessing this is what you are talking about.

Click on Program > Options > Advanced. Put a checkmark beside 'I want to have fun'.
Your question of what is added for Christmas and special tricks, I can only tell you what 'Village' was like last year. The Christmas Lights on the House, the Snowman is being built over the period of a few days, and the special trick was the Christmas Star. If the Christmas Star appears this year, click on the star.
New landscapes have been added over the past year and Millie (and Billy) have been added. So there may be some Christmas surprises that are new for 2011.
